Who doesn't love cheesecake? But sometimes just a bite is the right amount especially on a dessert buffet. These minis taste like traditional lemony NY-style cheesecake!

Here are the ingredients you need to make these little bites of heaven. Be sure to bring the dairy and eggs to room temp!

First, prepare the graham cracker crust by crushing the crackers either by hand or in a food processor.

Either in the processor or in a bowl, add the melted butter, brown sugar and salt to the graham cracker crumbs and mix well.

Grab a shot glass and mini muffin tin liners. Put a tablespoon of crust into each liner; use the bottom of the glass to press it into place.

Bake the crust for five minutes and let it cool while you prepare the filling with a hand or stand mixer.

Beat the cream cheese and sugar. Add egg, yogurt, vanilla extract, lemon juice and zest and salt and mix well again.

Put about 1 heaping tablespoon of filling in each crust-filled liner. Bake for 18-20 minutes. Remove, cool, refrigerate, top as desired.
