Ingredients you'll need:   Try to find unwaxed organic lemons.

Step 1:

Use unwaxed lemons and cut deep slits in them. Then use kosher salt to fill up the space. You'll need about a tablespoon per lemon.

Step 2:

Place the filled lemons in your sterilized jar, pushing them in as tightly as you can. Now let the jar sit for a week in a cool, dry place.

Step 3:

After one week, add enough lemon juice to cover the lemons, any optional aromatics, then cover and let sit for 3 more weeks.

Step 4:

After 4 weeks, the lemons are ready to use. Store them in the refrigerator and use for pasta, dips, dressings, chicken, fish and so much more.
