Chocolate Babka Minis

with pecan streusel & cream cheese glaze

Who can resist chocolate babka!! Whether you grew up eating it or just discovered it, these minis are the perfect bite of brioche-like dough with chocolate, streusel and cream cheese glaze!

Key Ingredients for Babka Dough

all-purpose flour

In the stand mixer bowl, whisk dry ingredients then add in wet ingredients. Place bowl on stand mixer to begin kneading.

STEP 1:

Knead with dough hook until ingredients are mostly combined. This will take about  two minutes.

STEP 2:

Begin adding softened butter and fully incorporating each piece. This process will take three to five minutes. Then continue kneading for 8 - 10 minutes longer.

STEP 3:

Place the dough in an oiled bowl and cover with plastic wrap or a towel. Set it in a warm place to let it rise.

STEP 4:

Let the dough rise until doubled in volume. This should take at least two hours because this is an enriched dough.

Melt the butter and chocolate and mix until very smooth - use either the microwave or a small pot on the stove top.

STEP 6:

Add the sugars and cocoa powder to melted chocolate/butter mixture and mix until well combined.

Combine all streusel ingredients in a medium-sized bowl, incorporating the softened butter last, using your fingers.

STEP 8:

Key Ingredients for Cream Cheese Glaze

Combine all glaze ingredients in a small bowl and whisk until smooth. Consistency should be thick but pourable.

STEP 9:

To form the mini babkas: Roll half the dough out to about 8X18 and put half the chocolate filling on top.

Spread the chocolate filling all the way to the edges and then sprinkle on cinnamon and pecans if using.

Slice 18-inch roll into 12 1.5-inch pieces with serrated knife.

Place each piece cut-side-up in a greased muffin tin.

STEP 14:

Top each mini babka with the pecan streusel.

Bake for about 20 minutes at 350°F or until they register 190°F internally.

Let cool and then top with the cream cheese glaze. I like to just spoon it on but you can use a piping bag too!
