Pomegranate Molasses Dressing

This salad dressing is so easy but such a show stopper because of the pomegranate molasses. You can buy the molasses or make it yourself. Directions are on my blog!

– 2 tsps minced shallot – 1/8 cup balsamic vinegar – 3 ¼ tsps pomegranate molasses  – ¼ cup olive oil – salt and pepper to taste

Add the finely chopped shallots, balsamic vinegar and pomegranate molasses to a medium bowl and mix with a whisk.

Slowly whisk in the olive oil until it combines fully with the pomegranate molasses and balsamic vinegar.

Add salt and pepper to taste, about a 1/4 to a 1/2 teaspoon of each. Taste and adjust to your own palate.

Serve on any salad but it is especially wonderful on an arugula and fig salad - fresh or dried figs!
