Rose Harissa

Are you an Ottolenghi recipe lover? Then you know he often recommends a particular type of harissa called rose harissa But where do you buy it? Hard to find but easy to make!

Here are the ingredients you need to make rose harissa. You can vary the types of peppers to control the spice level.

Fry coriander, cumin, caraway in 1 teaspoon olive oil over medium-high heat until fragrant, about 10 seconds.


Grind spices and rose petals with a mortar and pestle or in a spice grinder. Add smoked paprika.


Saute shallot, garlic and Serrano or Fresno chilis and hydrated chili de arbol in reserved oil until golden.


Place sauteed mixture, olive oil, spices, tomato paste, lemon juice, rose water, sugar and salt food processor. Process until smooth.


Put rose harissa in a sterilized jar, top with olive oil, and store in the fridge. Use within a couple of weeks.
