The Best Cheese Blintzes

A crispy, cheesy blintz has to be one of the world's best comfort foods. Once you make these yourself, I promise you will prepare them again and again.

Here are the ingredients you need for the blintz pancakes. Be sure you cool down the melted butter before adding it to the filling ingredients.

Here are the ingredients you need for the blintz filling. You can adjust the cheeses you use based on what you like or what you find at the store.

First, prepare the blintz pancake batter in a blender. Chill the batter for at least an hour or longer. Very important!


Prepare the cheese filling - whisk vigorously in a bowl or use a food processor. It comes together easily.


Make your blintz crepes using an 8" pan, medium heat and about a scant 1/4 cup of batter. Practice makes perfect!


Fill & fold the blintzes after all the crepes are ready to go. Layer the pancakes and keep them covered until ready to fill & fold.


Add about a tablespoon of filling to the non-smooth side of the pancake then fold as shown in the video below.


Pan fry the blintzes in butter until they brown on both sides. If frozen, do the same, but for just a minute or two longer.
