The Best Poppy Seed Filling Recipe

Poppy seed filling for hamantaschen or any baked good or pastry. Easy to make and you can really have fun with flavors. Keep it simple or jazz it up. You decide!

Poppy seed filling ingredients include ground poppy seeds, almond milk, sugar, lemon juice and zest and kosher salt.

Grind the poppy seeds, with a coffee grinder or a high speed blender such as a Vitamix. Or use a mortar and pestle or rolling pin and bag.


Place the poppy seeds, almond milk, sugar, lemon juice and zest, and salt in a small saucepan and bring to a boil on medium heat.


Turn to medium low to maintain a low boil. Let it cook for 10 - 15 minutes to thicken up. It will still slide easily off the spoon.


Taste for sweetness and flavor, adjust if necessary. Take it off the heat to cool. It will thicken as it cools down. Makes 1 cup.
