I learned to cook brisket in the braising method and I still love that style. But when time is short, I discovered the Instant Pot approach is fantastic. Even my mom couldn't tell the difference!

Key Ingredients for Instant Pot Brisket

Combine beer, ketchup, and cranberry sauce in a medium bowl or 4 cup measuring glass and set aside.

STEP 1:

Set the Instant Pot to sauté mode high, add some olive oil and when hot, add the brisket in to sear on both sides.

STEP 2:

Turn sauté mode to normal setting and sauté the onions until they have a caramel color and begin to look translucent.

STEP 3:

Place the seared brisket on the onions, pour the braising liquid over the meat and then turn the Instant Pot to 1 hour high pressure.

STEP 4:

After 60 minutes, let it NPR for 10 minutes, carefully let steam release, then remove meat to slice (against the grain!).

STEP 5:

Place the sliced brisket back in the Instant Pot and add the carrots and potatoes. Set it for 2 minutes high pressure, then NPR and quick release.

STEP 6:

Either serve the brisket immediately or let it cool for half an hour and refrigerate. You can also freeze the brisket for later use.
