Pistachio Snowball Cookies

OMGYummy.com

Do you love a good snowball cookie? Simple and yet somehow just a few ingredients create a cookie that just melts in your mouth. Add rose and cardamom, and just wow!

Here are all the ingredients you need to make snowball cookies with rose, cardamom and pistachio! Not many and they come together in so quickly!

Prep pistachios – toast and finely chop. I use a mini food processor or you can just use an old-fashioned knife 😉

1

Sift confectioners’ sugar and flour. In a stand mixer, combine the butter, sugar, rose and cardamom. Then add the flour and salt, then the pistachios – mix by hand if necessary.

2

Chill the dough – from 1/2 hour to overnight or longer. Then roll into balls and place on a parchment-lined tray.

3

Bake for 8-12 minutes, depending on whether you like the original melt-away texture or my MIL's "burnt" approach.

4

Let the cookies cool until you can easily handle them. Roll in powdered sugar. When serving, sift another layer of sugar on top.
