    • Hi! I'm Beth

Why you will love this recipe!

    • Add pizazz: A flavorful seasoning mix is the easiest way to spice up a boring meal or elevate a tasty one to memorable.
    • Homemade is better: With my optional use of nigella seeds - sometimes called black cumin or kalonji, your blend will taste that much better than anything you can find pre-made at the store.
    • Riffable: Use my recipe as a base, then proportion out the flavors to match your own taste buds! Leave something out, add something extra or use a different amount of one or more of the elements.
    • Control the salt: Often the store-bought varieties of everything bagel seasoning are too salty. When you make your own, you're in control of how much salt you use and you can taste it as you blend to assess.
    • On-demand: When you run out - just make some more.

    Ingredients and Substitutions

Flexibility is this everything bagel seasoning recipe's middle name!

    • Kosher salt or flake salt: I favor using flake salt for this blend - for the texture and how it melds so nicely with the other ingredients. But if you're not slightly crazy like me with about 10 or 15 kinds of salt in my pantry and don't want to buy any more, use your favorite coarse kosher salt like Diamond Crystal or Morton's (not table salt please!)
    • Black sesame seeds or Nigella seeds: This might the one (two) items you don't have in your pantry already. But you won't regret buying either one. I'm going to urge you to try the nigella seeds - also called kalonji and sometimes labeled black cumin. They have an mild oniony overtone with an herbal, peppery backnotes. Once you try them, I promise you'll want to use them over and over. In a Middle Eastern market look for nigella seeds, in an Indian market search for kalonji.
    • Poppy seeds: A classic bagel topper that just must be part of your mix! If you buy a large container, store the balance in the freezer because they will go rancid rather quickly.
    • Toasted sesame seeds: You can buy them toasted in almost any Asian market but if you only have untoasted, no big deal. In fact, if you are using these for bagels, they'll get toasted while you bake the bagels. But I have not had a problem using toasted ones and putting them on my unbaked bagels.
    • Granulated onion and garlic: Easy to find in any big box store in the spice aisle.

Beth's expert tips and recipe FAQs

    1. My best tip is to double this everything bagel seasoning recipe because you're going to want to use it on so many things.
    2. Use your taste buds to guide you - if you prefer even less salt (or more) or more of one seed than another - do it!
    3. Keep in mind that seeds don't last forever so if you don't plan to use this up quickly, consider storing it in the refrigerator or freezer to keep the seeds fresh.

    >> On bagels of course - try my bagels from The Essential Jewish Baking Cookbook page 36 or these asiago cheese bagels from Pastry Chef Online but instead of extra cheese on top, sprinkle with everything bagel seasoning instead! Or if you are gluten-free, try Fearless Dining's bagels!
